I reckon the humble egg is possibly the most versatile food I have come across. By itself, it could be scrambled, fried, poached, hard-boiled, soft-boiled. It could be a french omelette, spanish omelette, chinese omelette. Eggs are used to make mayo, hollandaise sauce, cakes, pancakes, waffles, meringues, cookies, fresh pasta, noodles… and the list goes on. I found this amazing recipe on http://www.latartinegourmande.com/ (one of my favorite flogs ever!) and modified it a little to make this delightful breakfast.
Serves 2
Ingredients:
- 1 small zucchini diced
- 4 white button mushrooms sliced
- 1 orange capsicum
- 1 red capsicum
- 1 yellow capsicum
- 1/2 punnet of cherry tomatoes
- 1 spanish onion diced
- 1 tsp minced garlic
- 1 tbsp tomato paste
- 1 tbsp brown sugar
- 1tbsp thyme leaves
- Olive oil
- Salt and pepper
- 2 large eggs
- Cream cheese for spreading on muffin
- 2 prosciutto slices / smoked salmon slices
- 2 halves of an English muffin
- Fresh parsley chopped
- Salt and pepper
Method:
- First, we start with preparing the vegetables.
- Preheat the oven at 200 degree celsius.
- Place the capsicums on a baking tray and drizzle with some olive oil and place in the oven for about 20 minutes till their skins start to blister.

- Boil some water in a saucepan and put the cherry tomatoes in for a minutes, then place under cold running water and remove their skins (this brings out the sweetness of the tomatoes.)

- Cut the tomatoes into half and place aside.
- Remove the capsicums from the oven and peel off their skins.

- Slice the capsicums into thin strips, remove seeds and put aside.

- Heat up a small saucepan add add some olive oil to it.
- Add the diced onions and minced garlic and sautée till fragrant
- Add the tomato paste and sugar, coating the onions and garlic in it.
- Add the diced zucchinis and sliced mushrooms and sautée for 5 mins. You can add a tbsp of water to the saucepan if it starts to burn a little because of the sugar.
- Add the sliced capsiums, tomatoes and thyme leaves.
- In a separate frying pan, fry up the eggs (sunny side up with yolks runny).
- Place English muffins in the toaster / grill and spread cream cheese on the muffins.
- To assemble, spoon the vegetable mixture on top of the muffins, gently place the egg on top of the vegetable mixture.
- Wrap the prosciutto / smoked salmon around the egg ensemble and season with cracked pepper and salt.
- Garnish with chopped parsley.
